How to make the Kardashian's Olive Oil Cake

If you’ve heard of Kourtney Kardashian’s and Kylie Jenner’s new favourite olive oil cakes then you’re most likely craving them just like me!

Kourtney’s multimedia lifestyle platform, Poosh and the Little House Confections (the makers of the raving olive oil cakes) partnered to make the rose water and lemon olive oil cake labelled Bomb A** Poosh Cake. They have also decided to give a sum of the sales to UNICEF, which is amazing!


This cake is great for first time cake bakers and a quick recipe for those who don’t want to spend 3 hours like me. I know you want to try this, so let’s get started!


Notes from the experience:

When I made the cake I decided to use natural food colouring from a beetroot for the first time! However, the cake batter didn’t take on the colour, so I recommend using more of the natural food colouring or using amounts of artificial colour according to the product packaging. Personally I would have preferred a stronger rose water flavour, and I recommend adding more than the recipe calls for according to your preference. Otherwise, the flavours from the lemon were perfect in my opinion. Enjoy!



 

Ingredients

  • Zest of 1 lemon

  • Juice from 1 lemon

  • ¾ cup Olive oil

  • 1 teaspoon Vanilla Extract

  • 2 tablespoons Rose water

  • Pink food colouring (as per your desire)

  • 1 ¾ cup All-purpose flour

  • 1 tablespoon Baking soda

  • ½ tablespoon Baking powder

  • ¼ teaspoon Salt

  • 3 Eggs

  • ¾ cup Brown sugar

Steps

  1. Watch the video below to help you get started.

  2. Add the dry ingredients in a bowl. (1 ¾ cup flour, 1 tbsp baking soda powder, ¼ tsp salt and ¾ cup sugar.) Make sure to sift them together for a light batter. Add lemon zest to the bowl and mix with a whisk.

  3. Then, beat 3 eggs in a separate bowl.

  4. Create a cavity in the centre of the mixture and add the wet ingredients in the hole. (3 eggs, ¾ cup olive oil, lemon juice, rosewater, food colouring and 1tsp vanilla extract)

  5. Pour into a 6 by 3 inch pan lined with parchment paper. Bake in the oven for 20-25 mins at 350 farenheit.

  6. Time to eat! (AFTER IT COOLS)
